I bet there are loads of builds happening. I recently visited a great Douglas Fir framed self build with straw bales for insulation in Totnes.

You could initiate a group. Anyone up for joining up with Lakshmi?

You could keep your eye out for land for sale in the spots you would like to build, you might find that local people in that area would want to join up, or others who view this site who aren't part of a group would be up for it.
